A Boreal Community Media exclusive - February 18, 2023

How did you come to the decision to open a business in Cook County?
I have owned a number of Subway restaurants in the twin cities since 1988.  The Grand Marais Subway became available, and we decided move to Grand Marais and re-open the Subway.  For a long time, we wished to live in this community, and the Subway opportunity gave us the chance.

Where did you grow up?  What are some of your other past work experiences or have you always been in the restaurant industry?
I grew up in Richfield MN class of 82. In my early twenties, I managed convenience store/gas stations, then managed a couple quick service auto locations.  That was my experience with managing a business before opening our 1st Subway restaurant.  Over the years I have owned neighborhood gyms and a Liquor store.

What are some of the challenges that you have encountered since opening?
Meeting staffing needs, of course.  And the challenges of predicting business sales and trends in a community like Grand Marais. Learning to be prepared for anything.

What brings you the most joy about living and working in Cook County?
The stars, Lake Superior, Boundary Waters, the woods. Iit allows me to pause and be in the moment.  Getting to know the people of this community, its more personal, more connected.

Other than Subway, what is your favorite place to dine out when you are not working?
We have gotten to know a few other restaurant owners and I appreciate every one of them.

Best business advice you were ever given and why?
After careful thought and planning, make a decision.  And the greatest skill is the ability to manage people.

Grandson, Sterling, who was born here last June.
