Mercantile owner Chelsea Pusc sold Gunflint Baking Company, a wholesale bakery, to Hana Crosby on April 15.

Pusc purchased the bakery from Rain Elfvin last fall. Crosby plans to stay and work in the current location at Betsy Bowen Studio. As for Chelsea, she realized taking on two labor-intensive businesses would be too much for her to tackle. She said she was thrilled when she reached out to Hana and found that Hana was making plans to start her own full service bakery. 

“It worked out great for both of us,” said Chelsea.

“I’m not planning any major changes,” said Crosby, who will run the operation by herself during the first year of business.

That’s to say, Hana will continue to make breads for restaurants, cookies for Java Moose, and lemon bars for the co-op.

“I will also make custom wedding cakes, birthday cakes, coffee cakes and cookies (by the dozen) by order,” she said.

“I really enjoy baking. When Chelsea called me I had begun looking at making my own bakery in my husband’s shop. She called at the right time.”

Over the last year Hana has been working out of the commercial kitchen at the Community Center. “I have been selling my lemon bars to the co-op and baking cookies for Java Moose, which I will continue to do,” she added.

The one change will come with a new name. Hana will call her business Crosby Bakery.

“I’m very excited and hope for the opportunity to grow the business,” she added.
