Come learn more about Stacy Paolo, owner/operator of Stacy's North Shore Treats.

How did you land in Cook County?  How did your journey lead you here?

We used to take vacations along the North Shore all the time. There's just something that pulls you here. We used to drive from Davenport (where my ex and I were living at the time) to Superior to Grand Marais then to Thunder Bay.  Then we would head back.  This was our favorite journey.  We were offered jobs at the ski hill and moved to the North Shore.  I have been here for 17 years now.  I am originally from the Iron Range so moving here was great.  It wasn't too far to go back and see family.

What (or who) inspired you to start a home baking business?

I come from a family of bakers.  I grew up watching my Grandma, her sisters and my mom whip some amazing things up.  I have been thinking of opening up my own business for a while now.  I loved being in the kitchen and learning the ropes.  Watching them make Potica and pies. I have some passed down recipes and hope they make others as happy as they make me. I would call my Grandma up for a recipe and she would tell me " oh you know how I did it, Just a little of this and some of that". I love seeing people's faces light up when they get their favorite treat.

What is involved in becoming a registered cottage baker?  Can you explain what this means?

I did some research first to see what it would entail to become a registered cottage baker.  There is some training similar to food safe for restaurants.  Depending how much you want to bake and do this there are two different tiers of training.  Then you file for your registration.  This just entails that I am able to bake certain things from my home and sell them directly to you.

What are some of your specialty and favorite items to bake?

I would say my specialty is my banana bread.  I love to make cookies like ginger snaps and peanut butter blossoms.  I also like to make apple bread and mixed berry bread.

When you are not busy baking, what are some hobbies that you enjoy doing to relax and unwind?

When I'm not baking I love to read, watch movies, window shop and spend time with my wonderful people.
